The Appeal of Niima Soba | Choose Between Curly and Thin Noodles

At Niima Soba, you can choose between “curly noodles” and “thin noodles.”

Since the texture varies depending on the type of noodles, be sure to try both!

Homemade curly noodles made in-house at the restaurant

According to official sources, the curly noodles are high-hydration noodles made by blending three types of flour and hand-rolling the dough in-house.

It is characterized by its hand-kneaded, curly texture and soft, chewy mouthfeel.

Since Miyako soba noodles are generally straight,

Curly noodles are a rare find.

Even with the same type of soba, the impression changes depending on the texture of the noodles.

It’s great that you can enjoy the experience right from the moment you choose your noodles.

Thin noodles with a satisfying bite

The thin noodles are fresh noodles ordered from “Chōdēgwa” in Nishihara Town on the main island of Okinawa.

Unlike the curly noodles made fresh at Niima Soba, these are characterized by their firm, chewy texture.

It might be a good idea to choose based on whether you prefer a chewy texture or enjoy a satisfying bite.

By the way“Chōdega” is also a popular spot on the main island of Okinawa!

Soba with Pork Belly

I ordered the most popular dish, Sanmai-niku Soba.

This is the first time I’ve seen perfectly round slices of pork belly—like chashu—in Miyako soba.

That looks delicious…

It looks beautiful, too

For the noodles, choose the house-made curly noodles.

It was chewy and absolutely delicious!

The price for a medium-sized one is 850 yen.

Even though it was a medium size, it was quite substantial.

I’m sure many people are satisfied with a small portion.
